Gram weights use the King Arthur Baking ingredient weight chart; “—” means the ingredient isn’t on the chart, so measure it by volume or count. Measure flour by spooning it into the cup and leveling, or better, weigh it.

Method

  1. Bring a saucepan of water to a boil. Add the vinegar if using, lower in the eggs, and boil 10 minutes. Transfer to an ice bath for 5 minutes, then peel.
  2. Halve the eggs and pop the yolks into a bowl. Mince the whites very fine and set aside.
  3. Mash the yolks with the mayonnaise, milk, salt, pepper and optional sugar until smooth and creamy. Fold in the minced whites.
  4. Butter one side of each bread slice (the butter keeps the filling from soaking the crumb). Mound the egg salad toward the center of 3 slices, top with the remaining slices, butter-side in, and gently press.
  5. Trim the crusts if you want the konbini look. Chill 10–15 minutes so the filling sets, then cut each sandwich on the diagonal and serve.

Tips

  • Don't want to bake? Pick up shokupan (Japanese milk bread) at any Asian market — or make our Japanese milk bread at /recipes/milk-bread/.
  • Eggs a week or two old peel more cleanly than very fresh ones.
  • Kewpie is richer and a little sweeter than standard mayo; if you use regular mayo, keep the optional sugar.
  • A short chill before cutting keeps the salad from spilling out the sides.
